Recipe Needed!


I bought a pork roast to make a "pulled pork" meal.

The problem is, the recipe I have has a ZILLION calories and carbs (I'm on another low-carb diet). It literally calls for a cup of packed brown sugar and for ketchup. It's crazy sugary.

Any other ideas? My roast is going to go bad, I'm afraid, before I can find something that might work. I've looked online, but all I can find are sweet/sugar based recipes.

Look up Carolina BBQ recipes. They're vinegar based.

Actually, here's one from my Outer Banks cook book:

Barbecue Sauce:
2 cups apple cider vinegar
2 tablespoons crushed red pepper
1/2 tablespoon chopped fresh garlic
1/2 tablespoon kosher salt
1 tablespoon freshly ground black pepper

In a medium saucepan, combine the vinegar, red pepper, garlic, and salt over high heat. Bring to a boil and then reduce the heat to medium-high. Boil for 15 to 20 minutes and then remove from the heat. Let cool then add the black pepper.

It's really yummy. It's not thick and sticky and tomato-y like regular sauce. It's thin and mostly clear and light. I like it way more than regular BBQ sauce.

Thank you...I'm not sure if I'm a vinegar girl or not....

My meat has a "buy by" date of 5/9/2008...today is 5/14. Too old? I'm freaky with meat like that...even the thought of icky meat makes my stomach turn.

Honestly, it's not as vinegary as you might think. the garlic and cayenne pepper overpower the vinegar.

I think if you cook it tonight you'll be O.K. I wouldn't wait any longer, though.
